I've been making this salad for the last 15 years or so and it's still one the my favorite things to have in the fridge! It's bright, refreshing, substantial and oh so good for you. This is as delicious served fresh and warm as it is taken for lunch and eaten cold the next day. Feel free to throw in whatever veggies you have on hand, this recipe is very adaptable!
SHRIMP AND QUINOA SEASAME SALAD
1 cup cooked quinoa
1 lb large shrimp
1 bell pepper (red, yellow or orange), chopped
3 green onions, chopped
1/2 cup cilantro, chopped
5 radishes, julienned
1/4 cup toasted sesame oil
1/4 cup rice vinegar
2-3 tbsp garlic chili paste, to taste
salt and pepper, to taste
Easy Peasy Directions:
Toss the peeled, deveined shrimp in salt and 1 tbsp of sesame oil. Heat a nonstick pan over medium high heat and coat with cooking spray. Cook the shrimp for about two minutes per side, until pink and just barely not opaque. Do not overcook the shrimp! Toss with all of the remaining ingredients and season to taste with salt. <3
