Yesterday, I got a surprise visit from my beautiful and talented friend for lunch, who also happens to be gluten and dairy free. Luckily, I eat and prepare a lot of gluten and dairy free foods, not due to any particular health concerns but because it's so tasty! This deliciously herby, sweet and sour salad is what I came up with. It's hearty and substantial (which feels especially appropriate in this shifting fall weather) while still being light and energizing. The bright green caper and cilantro vinaigrette I chose to dress it with really elevates this salad into something wonderful, but it would also pair well with a tahini sesame style dressing (such as Goddess). We went back for seconds... possibly thirds!
QUINOA & CABBAGE SALAD WITH CHICKEN AND PICKLED BEETS
1/2 cup tricolor quinoa, cooked and completely cooled
4-5 (small or 1-2 large) low sugar, pickled beets
2 tbsp fresh mint, chopped
2 tbsp fresh parsley, chopped
3 small cucumbers, halved lengthwise, then sliced 1/4 in thick.
1/4 medium red cabbage, very finely chopped
1 chicken breast, baked and cubed
1 bunch cilantro, chopped
1/4 cup extra virgin olive oil
2 tbsp capers (plus some of the liquid)
2 tbsp red wine vinegar
1 bunch green onions, chopped
1 tbsp water
For the chicken:
Preheat oven to 375. Place chicken on a parchment paper lined baking sheet coated with cooking spray and bake for 35-40 min. Let chicken completely cool then medium dice.
For the salad:
In a large bowl place your cooked and cooled quinoa. Add small diced beets, cucumbers, cabbage, parsley, mint, chicken and set aside.
For the dressing:
In a blender or mini-prep combine cilantro, olive oil, capers, red wine vinegar, green onions and water. Blend until creamy, set aside.
Toss together all the the salad ingredients with the dressing and you are ready to serve!
