The name says it all! This salad is so packed with flavor, nutrition and goodness, it's very easy to love. Even my husband, who is not a fan of kale, loves this salad. It's a great one to make in big batches and keep in the fridge (undressed and without the avocado) since the ingredients are so hearty and will not wilt, to have a healthy delicious lunch ready whenever the urge hits. It also travels well if you're looking for a killer veggie side to bring to a BBQ. Your body will thank you!
1/4 cup extra virgin olive oil
Juice of 1 large lemon
1-2 tbsp fresh ginger, peeled & grated using microplane
1 tbsp whole grain mustard
2 tsp maple syrup
1/2 tsp kosher salt (to taste)
1/2 bunch of dino kale, thinkly sliced, thick ribs removed
1 cup red cabbage, very thinly sliced
1 cup broccoli florets, broken into small, bitesized bits
1 large carrot, peeled and grated
1/2 large red beet, peeled and grated
1 bell pepper (any color but green), cup into matchsticks
1 avocado, peeled and diced
1/4 cup fresh parsley, chopped
1/4 cup walnut bits
1 tbsp sesame seeds
1) Combine the dressing ingredients with a whisk. Mix the salad ingredients. Dress and serve!
