I'm a savory breakfast kinda gal and this one has been my go-to lately. My New Years resolution this year was to eat more kimchi (lofty goals, I know, ha) and from that goal this breakfast was created. With only four main ingredients, this is one of those "beauty in simplicity" sort of meals, but trust me, it's delicious!
KALE & KIMCHI EGGS
1/2 medium white onion, chopped
5-6 large leaves kale (I prefer dino for this preparation but whatever you have on hand will work), thick stems removed, chopped
1/2 cup kimchi (spicy or regular, I prefer spicy), chopped
1 tbsp nuetral oil (such as safflower)
1 tbsp butter
1) In a large nonstick pan, heat the oil over medium heat. Saute the onion until soft and slightly translucent, about 5 minutes. Add the kale; saute until soft, about ten more minutes. If you see that either the kale or onion is beginning to brown, add a splash of water to the pan which will help to steam the kale. Add the kimchi and cook until most liquid is absorbed and kimchi is warm, about 5 minutes.
2) In a small nonstick pan, heat the butter. Cook the egg/eggs until your preferred doneness, but I recommend leaving the yolk quite runny, as it will create a sauce with the butter when poured over the kale and kimchi.
3) Place the egg on the kimchi mixture in a bowl and enjoy!
