I really don't feel like I'm exaggerating here... it really is the best. Ever. I served this salad dressing on chopped dine kale with avocados and thinly sliced apples and it brightened up the hearty greens to something truly special, even when prepared so simply. Another great thing about this dressing is it's composed of mostly pantry items and it last for about two weeks, so you can easily whip up a double batch of it to have on hand. If you don't already love kale (as I clearly do) this dressing will inspire you to eat more of it!

BEST EVER KALE SALAD DRESSING
4 anchovy fillets
2 garlic cloves
2 tbsp drained capers
1 tbsp dijon mustard
1/2 tsp crushed red pepper
1/2 tsp ground cumin
1/2 tsp kosher salt
1/4 tsp pepper
grated rind + juice of two lemons
1/2 cup olive oil
1) Process everything together in a blender and blend for about a minute. Store in an airtight container- this recipe make enough to dress about two bunches of kale,
