Get ready to fall in love! This chutney is so versatile and delicious, and is definitely a crowd pleaser. I love the aroma of it lofting through my home as it simmers! I've not yet made it for anyone that didn't ask for the recipe. Ask and you shall receive, my friends! ;) I like to serve it over grilled pork chops but it would work over any protein, especially chicken, tofu or salmon.
APPLE GINGER CHUTNEY
4 large apples, cored and chopped
2 yellow onions, chopped
1 1/2 cups apple cider vinegar
3/4 cup packed brown sugar
1/4 cup finely grated fresh ginger
1 red bell pepper, finely chopped
1 tsp dry mjstard
1 tsp salt
1/2 tsp red pepper flakes
1) Combine all ingredients in a dutch over over medium heat. Bring to a boil and simmer until liquid is reduce and apples have broken down a bit, about 1 hour. Serve over the protein of your choice!
